Mac OS X is basically a very pretty looking UNIX. Therefore, the Mac OS isn't nearly as archecture-bound as it was in the pre-OS X days. And even back when they were, they still managed to switch from the Motorola 68000 series to the PPC - it took a lot of work, but it got done.
